Currently, one of my top inspirational cake artists is Ron Ben-Israel because he is able to create both classic and luxurious cake designs with beautifully created sugar flowers in exquisite detail. His style of cakes are exactly what I like to see in my own - clean, classic and elegant.
Naomi Yamamoto has an amazing talent and technique for sugar flowers. Her sugar flowers are so realistic looking and appealing. There is something simply beautiful about blousy blooms, soft English roses and contrasting florals, that inspire me to recreate them in sugar and become as skilful as Naomi.
During my cake hobby days, I looked up to Mich Turner in amazement. It was her precision piping skills and attention to detail with sugar flowers and creative designs that really impressed me. I remember thinking that I would love to be able to make cakes like that and the designs really appealed to my style and the sort of cakes that I wished I could make.
Although I love bold pops of colour, when it comes to cake decorating, I am a sucker for soft, romantic palettes. I am always drawn to cakes decorated in this way and Peggy Porschen’s cakes have been no different. I really admire Peggy’s branding and how every detail seems to transport you into a pretty, fantasy world of cake and beautiful sugar flowers. It was Peggy’s vision for her own business that helped me to see that cake is not just made to be eaten, but experienced.
One of the first cake decorating books I purchased was by Alan Dunn. I loved the way he made decorating techniques easy to understand and follow. With much practice, I was able to develop a love for sugar flowers - a technique that I admired, but always thought I was a long way from. It taught me how to ice, dowel and stack tiered cakes and add pretty little details that make a cake unique to the client.

I love that the cake industry is full of such talented artists, it is truly inspirational.
