I was super excited but acutely aware of my inexperience, honoured yet determined to make the couple happy. What am I talking about? I am talking about my first ever commissioned wedding cake.

It was 3 tiers of rich chocolate sponge coated in chocolate ganache, decorated with white sugarpaste icing and a satin ribbon trim around each tier. The top tier had artificial roses (due to a lack of confidence in my sugar flower skills) and a personalised plaque made from sugar with the couples monogram and wedding date.
When I embarked on this task, I never anticipated how good it would feel to create something so special and to see how happy it made others. The positive feedback was overwhelming and I think that was when I really started to believe that maybe I was good at this.
When I look back at this wedding cake, I can see areas of improvement, but I can also see so much growth in comparison to where I am now and the humble beginnings of my rollercoaster journey in cake.
What inspires me to continue is the desire to be a better version of myself and to find areas that I can improve in so as to make the customer experience fun, seamless and unforgettable. I’m creatively minded, so that often drives me to try new things, look at something in a different light and experiment with colour, texture and other mediums. I often find that inspiration for cake designs can pop up at any moment which means that I have a steady flow of designs waiting to be tested, tweaked and brought to life, which fuels me.
Other than honing my skills as a baker and cake decorator, my customers are a huge factor, if not the main factor in inspiring me to continue. The comments expressed about my cakes and their design really are priceless. It’s that final confirmation that what I do is valuable and valued by those that matter.
