It is usually a few months between the consultation and a couples big day, so we look over the overall design and flavours so that they are clear in mind. There may be additional equipment, ingredients or tools that need to be ordered and if there is extensive sugar flower work to do, it will be started during this time.
4 days before wedding - Bake Cakes
All of the baking is done on this day, so that each cake is at the same stage of the ageing process, after which they are securely wrapped in cling film and foil to maintain their freshness.
3 days before the wedding - Fill, Frost & Cover
It is not uncommon for couples to opt for a different flavour for each tier, which can mean a variety of different flavoured fillings. Once our cakes are filled with your chosen fillings they are sealed and coated with white chocolate ganache to lock in the moisture and provide a smooth foundation for the sugarpaste icing to go on top.
The ganached cakes and the cake board are covered in our favourite Massa Ticino sugarpaste icing to create a smooth, crisp finish and then left overnight to firm up ready for the decoration stage.
2 days before the wedding - Decorate
The fun part! Bringing the design to fruition. Each tier may have a different feature, or all tiers may follow the same idea. Either way, much care is taken to ensure the couple’s vision comes through and they get exactly what they wanted.
1 Day before the wedding - Dowel, Box and ready for transportation
The cakes are dowelled to add internal support once they are stacked. Each tier is placed into a box for easier transportation. Depending on the size and level of design, the cake may be transported already stacked.
Day of the wedding
Delivery is made to your venue at the agreed time where I liaise with your designated contact to set up the cake in its chosen place. On average it takes about an hour to set up, but the size and amount of decoration can make it longer. Before we leave, your cake is double checked and triple checked to make sure it looks picture perfect.
